Note that caviar will remain optimal in your refrigerator, unopened, for 4-6 weeks. *except tobikkos and salmon roes. They should be kept frozen. Crucially, once opened you should consume within three days.

Choosing the right caviar size depends on how many people you’re serving — and how much everyone loves caviar. For a single tin per group, here’s a helpful guide to portion sizes:
1–2 guests: 1 oz (30 g)
2–3 guests: 2 oz (50 g)
3–5 guests: 4.4 oz (125 g)
6–10 guests: 7 oz (250 g)
10–15 guests: 500 g
20–25 guests: 1 kg
