Foie Gras, French for fat liver, is derived from specially fattened duck liver. Our Foie Gras products are mainly produced from the Moulard breed, a hybrid variety of domestic duck produced by crossing a female Pekin with a male Barbarie. A migratory bird that tends to live close to water, moulard ducks have a natural capacity to accumulate fat in their livers to help them fly thousands of miles without feeding. The increase in size of their liver can reach 5 times its original size. There are no antibiotics or hormones used during production.
