Duck breast with soba noodles and mango

Ingredients

4 x 180g duck breast filets 

2 tablespoons hoisin sauce

270g packet soba noodles

1/3 cup Soy sauce

1 tablespoon each sesame oil and brown sugar

2 cups watercress sprigs

Juice of 1 lime

1 mango

 

Preheat the oven to 180°C. Season the duck, then place, skin-side down, in a non-stick ovenproof frypan over low heat. Cook for 5-6 minutes until most of the fat has rendered and the skin is crisp. Turn, then brush skin with hoisin sauce. Transfer to the oven and bake for 6 minutes or until just cooked, but still pink in the center. Rest, loosely covered with foil, for 5 minutes. Meanwhile, cook noodles according to packet instructions, then drain. Whisk soy, oil, sugar and lime juice together to make a dressing, then toss half with the noodles. Thinly slice the duck and serve with the mango, watercress and noodles. Drizzle with the remaining dressing.

 

Fried Eggs with Serrano Ham and Caviar

Ingredients

Extra-virgin olive oil 

4 large Yukon Gold potatoes

Kosher salt

8 large eggs

8 slices of serrano ham

2 ounces caviar (Your choice)

 

Preheat the oven to 275°. Set a rack in a large baking sheet. In a large cast-iron skillet, heat 3/4 inch of olive oil to 300°. Working in 2 batches, fry the potatoes until golden brown and lightly crisp on the outside, about 7 minutes. Transfer the potatoes to the rack to drain and immediately season with kosher salt. Keep warm in the oven. Carefully transfer 1 cup of the hot olive oil from the cast-iron skillet to a large nonstick skillet. Crack 4 of the eggs into the skillet and gently fry over moderately low heat until the whites are set and the yolks are slightly runny, about 5 minutes. Transfer to a plate. Repeat with the remaining 4 eggs. Divide the fries among 4 plates. Top each plate with 2 fried eggs, 2 slices of ham and a spoonful of caviar  and serve immediately.

 

Beef Sandwich

Ingredients

2 tablespoons butter

8 slices rye bread

8 slices of beef

8 slices Swiss cheese

1 cup sauerkraut, drained

½ cup your favorite dressing

 

Preheat a large skillet or griddle on medium heat. Lightly butter one side of bread slices. Spread non-buttered sides with the dressing of your choice. On 4 bread slices, layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut and a second slice of Swiss cheese. Top with remaining bread slices, buttered sides out. Grill sandwiches until both sides are golden brown, about 5 minutes per side. Serve hot.
