Ingredients

2 slices French bread

2 slices Serrano Ham

2 slices Black Truffle

 

Cut 2 slices from a fresh baguette. Butter generously. Layer on the Serrano ham and the truffle slices. Serve immediately and enjoy!

 

Soft Scrambled Eggs with Ham and Truffles

Ingredients

6 large eggs

1/2 cup lower-sodium chicken broth

2 tablespoons crème fraîche

1/4 teaspoon kosher salt

2 tablespoons unsalted butter

1/2 ounce freshly shaved Black Truffle 

1 tablespoon finely chopped fresh chives

6 thin slices Iberico Ham 

2  toasted brioche slices

 

Whisk eggs in a medium saucepan until thoroughly blended. Whisk in broth. Place saucepan over low heat; cook, whisking gently and constantly and scraping bottom of pan so as not to incorporate any air (you should not see any bubbles on sides of pan), until eggs begin to thicken, form fine curds, and have the texture of loose polenta, 5 to 6 minutes. Quickly whisk in crème fraîche and salt until blended. Immediately remove from heat, and, using a large spoon or rubber spatula, stir in butter until melted. Stir in truffles, if using; chives; and salt to taste.Spoon eggs into warmed bowls, and drape with Iberico ham slices. Serve immediately with toasted brioche slices.

 

Truffled Mushroom with “Pata Negra” Ham and Tallegio Grilled Cheese

Ingredients

2 tablespoons butter

1 tablespoon olive oil

1/4 pound brown mushrooms sliced

2 cups spinach leaves

8 slices Bellota “Pata Negra” Ham 

16 slices Tallegio cheese sliced 1/4″ thick

1/2 teaspoon Truffle Oil

kosher salt

8 slices sourdough bread

 

Add olive oil to a medium skillet over medium heat and sauté mushrooms for about 5 minutes, stirring occasionally. Add spinach in batches and cook for 2-3 minutes. Season with salt and a truffle oil and set aside. On each slice of 4 slices of bread layer 1 slice of cheese then mushrooms and spinach, “Pata Negra” Ham, 1 more slice of cheese and remaining bread slices. Heat a skillet on medium and melt 1 tablespoon of butter. Add to skillet two sandwiches at a time and cook for about 3-4 minutes or until bread becomes golden and cheese starts to melt. Flip the sandwich once and cook until the cheese melts and bread becomes golden, another 2-3 minutes. Repeat with additional sandwiches. Cut in half and serve hot.
